Blueberry Coffee Cake

 

This is a Betty Crocker recipe which I first had when visiting Frances on Naushon during blueberry season.  It's another excellent excuse to eat blueberries.

 

Batter:

  • 2 cups flour
  • 3/4 cup sugar
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 cup Crisco
  • 3/4 cup milk
  • 1 egg

 

  • 2 cups blueberries

 

Topping:

  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 tsp. cinnamon
  • 4 Tbsp. butter, cold

 

 

  1. Preheat oven to 375°.
  2. Blend all but the blueberries for 30 seconds; gently mix in the blueberries.
  3. Place in a greased 9" x 9" x 2" deep pan and cover with the combined topping ingredients.
  4. Bake for 50 minutes.  Cool in the pan.
