Plum Tart


Plum Tart

 

This little gem is due to Martie who found it in the New York Times.  It's just the sort of thing that a quick summer meal needs.

 

 

 

 

  1. Preheat oven to 350°.
  2. Cream the butter and sugar together until creamy.
  3. Sift together the flour, baking powder and salt.  Add with the eggs to the butter and sugar and mix.  The consistency will be that of sour cream.  Spread into the bottom of a 9" pan.
  4. Arrange the plums on top of the batter.  Cover with sugar, lemon juice, and cinnamon to taste.
  5. Bake 50 to 60 minutes.
