Blueberry Coffee Cake
This is a Betty Crocker recipe which I first had when visiting Frances on Naushon during blueberry season. It's another excellent excuse to eat blueberries.
Batter:
- 2 cups flour
- 3/4 cup sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1/4 cup Crisco
- 3/4 cup milk
- 1 egg
Topping:
- 1/2 cup sugar
- 1/3 cup flour
- 1/2 tsp. cinnamon
- 4 Tbsp. butter, cold
- Preheat oven to 375°.
- Blend all but the blueberries for 30 seconds; gently mix in the blueberries.
- Place in a greased 9" x 9" x 2" deep pan and cover with the combined topping ingredients.
- Bake for 50 minutes. Cool in the pan.
